We are honored to announce that Zestea Back to Nature's《EMBER 微燼》has won Gold at the 2026 World Alcohol-Free Awards. Among nearly 600 entries from over 30 countries, to be recognized on this international stage is an honor we do not take lightly — and a affirmation of the fermentation craft Zestea has been committed to for years.
一切從發酵開始
《EMBER 微燼》的誕生,源於與 Simple Kaffa 興波咖啡的一段相遇。
興波咖啡是亞洲最具代表性的精品咖啡品牌之一,對咖啡風土與品質的執著,與 Zestea 對發酵工藝的態度不謀而合。我們決定共同實驗一件前所未有的事:將陳年普洱茶與衣索比亞 Kurume 批次咖啡豆放入同一個發酵槽,讓時間與微生物去決定最終的風味走向。
發酵的迷人之處,正在於它的不可預測。我們無法完全掌控結果,只能創造最好的條件,然後等待。而《EMBER 微燼》,就是這份等待給予我們的禮物。
Ember began with a chance encounter with Simple Kaffa, one of Asia's most celebrated specialty coffee roasters. Their dedication to coffee terroir and quality resonated deeply with Zestea's approach to fermentation. Together, we embarked on something we had never done before: co-fermenting aged pu-erh tea with Ethiopian Kurume coffee, letting time and microorganisms shape the final flavor. That unpredictability is exactly what makes fermentation so fascinating. We cannot fully control the outcome — we can only create the best conditions, and then wait. Ember is the gift that waiting gave us.
